Additionally to what Jürgen said; there are two other ways of cancelling an ongoing export process, which may be handy:
1. Add a keyboard shortcut to the LyX function "export-cancel" in Tools > Preferences > Editing > Shortcuts.
2. During the export process of a document, a menuitem spawns in the Document menu.
