One way how to select the theme you want is to use commandline parameter -style, e.g:
$ lyx -style=Fusion

The problem might be that ubuntu installs only limited set of styles 
(I see only Fusion and Windows styles on Debian). 
But maybe windows style might serve your purposes well.
