Individual counters for Problems, Examples, etc.?

AFAIK this is indeed the default behavior.

I think it's just a matter of choosing the right "theorems..." module:

document > parameters > modules

Scroll down to the end to see the various "theorems..." options. They
are well explained, and I guess you should find one that does what you
want.
