Anyone using LyX for quizes on Canvas with math?

You can do that and remove the various bits you don't need. Or you can
preview the whole body and copy and paste that (minus the body tags).

That said, Canvas lets you create individual questions on the quiz,
which you may well want to do. In that case, you'd be cutting and
pasting parts.
