We have several tests set up that we can use to check whether other
solutions work well. In fact, some of the tests fail when compiling LyX
with our included iconv but not when compiling LyX with a system iconv
(on Ubuntu 20.04 and 19.10 at least). The tests consist of exporting the
files in autotests/export/latex/unicodesymbols with many different
encodings.
